We decided for this pizza recipe, to associate the Provola with the Speck with ricotta and bursts of hazelnuts. The Provola is a fresh cow's milk cheese, with spun and soft taste from Calabria. The Speck is a smoked raw ham, made from the back legs of the pork and dried in salt and various spices (garlic, bay leaves, juniper berries and nutmeg).
